For urban dwellers, what we put into our stomachs every day might be the closest we get to “nature”. Therefore, what we eat and how we eat are reflective of how we understand our relationship with nature. From its pilot episode, Chef’s Table has now aired six seasons, going around the world to walk you through chefs’ journey of life and their lives in the kitchen. The following two chefs follow nature as their masters, touching much more than your palette.
Season 3 Episode 6—Virgilio Martínez
Virgilio Martinez is the founder of Lima, a Michelin 1-star Peruvian restaurant, selected as the world’s best 50 restaurants. Many renowned chefs return to local favors after visiting the global kitchen, but the way this Peruvian chef presents “Peru” goes way beyond your wildest imagination. His unrivalled perseverance brought him to Peru’s coasts, deserts, mountains, forests… Searching for rarely known ingredients and traditional cooking methods; his crazed passion pushed him to set up a laboratory in the middle of nowhere to identify and investigate “ingredients”. He aspires to present the nature and biodiversity of Peru on his table, letting diners “see”, “taste” and “feel” the Tambopata high jungle, the Amazon and the Andes.
Season 3 Episode 1—Jeong Kwan
Jeong Kwan, a nun practicing Buddhism in the Baekyangsa Temple is the only non-professional chef in the series—but her temple cuisines could rival the best restaurants in the world. Kwan’s cooking philosophy brought great changes in her life. She started making noodles for her parents at eight. When her father visited for the last time, she cooked him a plate of grilled mushroom. When she plants, she respects the growth cycles of plants and the needs of other species; the plantation is shared with nature, plants full of holes are no less beautiful. To her, cooking is life; is the practice of a religion; is the exchange of energy among people, between nature and people. On her table is inheritance, creativity, freedom and also inspiration.
